History
Carrots in their wild form originated in central Asia. They were very different from the preferred domesticated orange coloured ones we see in the West today.
The spiritual significance is said to be in its protective energy against the evil eye

It is well known that during the Second World War, the consumption of carrots was promoted as a nutritional source as part of the war effort, and as a cover for the use of radar by the allies.
9 Key Benefits of Carrots
The following benefits are based on scientific research conducted over many years:
1. Vision & Eye Health
- High in beta-carotene, which converts to vitamin A—essential for night vision and overall eye function. Carotenoids like lutein and zeaxanthin support retinal health and may reduce the risk of macular degeneration and cataracts. AANMCCleveland Clinic
2. Immune Support
- Vitamin A and vitamin C strengthen the immune system by supporting mucous membranes and enhancing white blood cell function.
3. Heart Health & Cholesterol
- Rich in fiber and potassium, carrots help lower LDL cholesterol and support healthy blood pressure.
4. Digestive & Gut Health
- High in both soluble and insoluble fiber, which promotes regularity, feeds beneficial gut bacteria, and supports overall digestive health.
5. Weight Management & Blood Sugar Regulation
- Low in calories and sugar, carrots promote fullness and can help maintain healthy blood glucose levels.
6. Antioxidant & Cancer-Fighting Properties
- Loaded with antioxidants—beta-carotene, lycopene, and other carotenoids—which combat oxidative stress and may reduce the risk of certain cancers, such as prostate, colorectal, and lung.
7. Skin Health
- Beta-carotene and vitamin C support skin integrity and collagen production. Carotenoids also help defend against UV-induced damage.
8. Bone & Cognitive Health
- Carrots supply vitamin K, calcium, and phosphorus—key for bone strength—and contain luteolin and falcarinol, linked to cognitive improvement and reduced brain inflammation.
9. Reduce Inflammation
- Nutrients like luteolin and various antioxidants help counter inflammation, contributing to overall systemic health.
Growing Carrots
I grew some carrots in my raised garden. They were the sweetest carrots I have ever tasted. They were stubby, but I was not sure if it was because the raised garden was not deep enough as there were a few that had a more regular shape.
Buying Carrots
If you buy carrots in the grocery store, they are usually packaged in a bunch or loose. Look for carrots that are firm and clean. At farmers markets, sometimes some dirt is left on the carrots to show its freshness. A carrot that is pliable when bent, or showing signs of wilting will not have the best flavour. If they have tops, these are edible and can be used like parsley eaten raw or cooked.
Carrot Drinks
There are many ways to drink carrots, and one of the ways in some countries in Eastern Europe is to use carrots as a coffee substitute. These countries also use wheat, barley and chicory dating back to a time when items such as coffee was considered a luxury item and not readily available in the country. That’s right, carrot coffee is roasted until there is some caramelisation, then dried as is, or with added spices.

Chop into small pieces and blend. Back in the day, women would grate the carrots by hand. Use as much water as necessary to make the blend smooth.
Strain the carrots
Add vanilla nutmeg or cinnamon to taste. Serve over ice.
Cut the thick sweet condensed milk. This milk had its origins in the days before refrigeration that is why it was popular in hot countries as substitute for fresh milk. I find the sugar content way too much for my taste buds, although it is up to the individual taste, just know you have options such as almond milk, but the juice will not be as thick. Below is a milk free, sugar free version.
